- Millets are small-grained, annual, warm-weather cereals belonging to the grass family. They are highly tolerant of drought and other extreme weather conditions and have a similar nutrient content to other major cereals. Millets have numerous health benefits, including helping to lower your blood sugar and cholesterol levels. They’re also gluten-free, so people with celiac disease or gluten sensitivities can enjoy them.
- In a medium pot over high heat, bring 2 3/4 cups of water to a boil with 1 cup of millet. Simmer for 18 minutes and then let stand for 10 minutes.
